Korean-Mexican food truck opens in South Bend Tuesday
SOUTH BEND, Ind. -- South Bend has a new food truck in town as Korean-Mexican fusion eatery A Bite with Mee held their ribbon-cutting ceremony on Tuesday morning at La Casa de Amistad.
In attendance for the ceremony were a few South Bend Common Council members as well as Mayor James Mueller.
Officially, A Bite with Mee has been in South Bend selling food at festivals and other events, as well as partnering with some local co-ops for many years, but this new food truck will be a step up from the canopy tents they have been serving out of for nearly a decade.
"Well, I mean, it was speechless, really, it's really, it's a great feeling to accomplish something so big, and we're looking forward to seeing what, what fruits come from ... from this and be able to also share that with the community," said co-owner Jairo Aleman.
"The menu is basically a fusion of Mexican, Korean, and that is something that we thought would be a great fit in South Bend, something that is kind of missing as elements that come together to you know, have a celebration in your mouth. And we wanted to bring that to the community. So, we're pretty excited to share that."
The food truck was financed by the City of South Bend through its Revolving Loan Fund.
"Can't express what I'm saying, and it's really true," Aleman said. "You really can't have the words to express what it means. Like all we do is we love to cook. That's what we know. That's what we do well and we and to see it actually be something that people enjoy is just like it's, it's, it's ..."
" ... Nourishing all around to nourish other people," Aleman's co-owner, Robyn Klingerman interjected. "It also nourishes our souls to see everybody enjoy it."
